    Using Pride of Cows Milk & Ghee 2

    Mango cake

    Serves 7


    • 2 cups all-purpose flour
    • 1½ cups granulated sugar
    • 1 tsp baking powder
    • ½ tsp baking soda
    • ¼ tsp salt
    • ½ cup unsalted butter
    • 1 cup mango puree 
    • ½ cup Pride of Cows milk
    • 1 tsp vanilla extract
    • For the Mango Frosting:
    • 1 cup unsalted butter
    • 4 cups powdered sugar
    • ½ cup mango puree
    • 1 tsp vanilla extract


    Preheat the Oven:

    Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.


    Prepare Dry Ingredients:

    In a bowl, sift together the all-purpose flour, baking powder, baking soda, and salt. Set aside.


    Combine Wet Ingredients:

    In another mixing bowl, whisk together the granulated sugar and vegetable oil until well combined and slightly creamy.Mix in the mango puree and vanilla extract until smooth.


    Alternate with Dry Ingredients:

    Gradually add the sifted dry ingredients to the wet mixture in three parts, alternating with the Pride of Cows milk. Mix gently after each addition until just combined. Do not overmix.


    Bake the Cake:

    Divide the batter equally between the prepared cake pans. Smooth the tops with a spatula.Bake in the preheated oven for about 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean.

    Once cake is baked set is aside for 10 minute.

    For Mango Frosting

    1.In a mixing bowl cream a softened unsalted butter until it’s smooth and creamy.

    2. Gradually add the mango puree and vanila extract to a butter mixing well.

    3. Gradually add powdered sugar one cup at a time and  mix well until the frosting is smooth.

    Assembling the cake

    1. Place one cake layer on serving plate and spread mango frosting evenly.Place the 2nd layer and repeat.

    2.Apply thin layer of frosting ( Crumb Coat) all over the cake and then spread  mango frosting all over the cake.

    3.Decorate the cake with fresh mango slice.
